Pastry Chef - Part 1

I'm just beginning a portrait, 24' x 30', of Joseph McRae who is the head pastry chef in Sundance, UT. I've sketched out the composition in charcoal to find the overall placement and size of the objects and figure. Charcoal is nice because it's easily removed and I can paint over it to seal the sketch, then just wipe it off.
